Dave Bonomi opened Coalfire Pizza in 2007 with the hope of putting an American spin on traditional Neopolitan style pizza. Coalfire has since found themselves on numerous “Best Pizza in Chicago” lists and has been highly rated among many restaurant review platforms, specifically for their excellent service, unusual cooking technique, and their top-selling menu items, the burrata appetizer, and pepperoni and whipped ricotta pizza.
Their unique cooking technique involves bituminous coal sourced from Kentucky and Southern Illinois.. Coalfire also uses smoke “scrubbers” at both locations to reduce all emissions by 99%. All of the bituminous coal used in the United States is produced domestically by American workers, primarily in northeastern Pennsylvania. A portion of the price from each ton of the coal sold goes to a federal fund used to reclaim abandoned mines from previous generations.
Despite COVID-19, Coalfire has managed to continue business successfully by focusing on carry-out, delivery, and recently expanded outdoor patio seating. It certainly helps that Coalfire has such high rated pizza and loyal customers.
After meeting with six different banks that wouldn’t fund his business, Bonomi turned to Centrust, who went out of their way to help a small growing business.
